I know what everyone is thinking, what can I make that is stress free, but still impresses? Don’t worry, I am going to help you!  No matter what, you want to serve foods that can be easily prepared, served, and eaten. Starters:

You want to serve fresh and cool tasting foods during the summer, Melon Gazpacho with Grilled Shrimp is the perfect combination! This recipe by Cat Cora has the chilled gazpacho with the hot grilled shrimp making it perfect for dipping and eating all in one!

Another great starter is Grilled Pineapple and Avocado Guacamole! The creamy texture of the avocado and the sweetness of the pineapple makes a great dip with homemade pita chips! Thanks to Confections of a Foodie Bride for the recipe and gorgeous image.

Continue the refreshing vibe with Shrimp and Vegetable Summer Rolls. The Vietnamese rolls may seem scary to make but they’re really easy. Don’t let the rice paper scare you. The rolls are stuffed with shrimp, yellow peppers, lettuce, and carrots giving it a delicious crunch when you bite into it. Thanks to LiveBetterAmerica for the beautiful image.

Main Event:

Now for the main course! Grilled Skirt Steak with Red Wine Chimichurri Sauce. This summer recipe is packed with Latin flavor!

Sides:

I would serve Grilled Corn on the Cob with Ancho Chili-Lime Butter but make sure to grill the corn in its natural husk so it protects the corn from burning!

But don’t forget about the sides! I know Potato salads usually get a bad reputation but this one is light yet creamy and tasty when kept chilled!  This Potato Salad recipe is made with crème fraiche and the best part of it all? It only requires five ingredients!

Dessert:

Satisfy that sweet tooth with a Grilled Banana Split! The warm banana on the grill with ice cream and toasted pecans is a definite highlight that everyone will be talking about for years. Thanks to eyecandey.com for the delicious image.

Bottoms Up!

Drink it all down with fresh chilled homemade Lemonade. I found this awesome slideshow of the best lemonade recipes from myrecipes.com and there is bound to be one that will please your crowd in there.  You can whip this up way before your guests arrive, just don’t drink it all yourself.  And, it tastes pretty amazing with a splash of vodka or gin in it too!
